The Tuna and 3 bean salad is a perfect lunch time meal, as it contains both tuna and mixed beans (borlotti beans, black beans and flageolet beans), potatoes, spinach and red peppers. This meal is high in protein, keeping you full throughout the afternoon making sure you avoid the mid afternoon energy slump! Black beans have a high protein, iron and Vitamin B content, Tuna is high in protein and contains omega 3 fatty acids, spinach is high in Vitamins A, C and E, calcium and Iron. Whilst the red peppers are great for their Vitamin A, C, B6 and K content.
Finish off with a small banana, chopped up in a pot of natural yoghurt. The banana is a great dietary fibre source, contains vitamin C, potassium and is a very good source of vitamin B6. Enjoyed with some natural yoghurt, this makes it a good rounded dessert as the natural yoghurt has a good balance of proteins, carbohydrates and fats and has a high amount of probiotic bacteria.
